Three Healthy, Delicious Tomato Salads

Fresh salads are a delicious way to enjoy your homegrown tomatoes raw. Here are three of our favourites.

Iranian Shirazi Tomato Salad

Ingredients:Tomato Salad

  • 3 tomatoes
  • 2 cucumbers
  • 1 bunch green onions/spring onions
  • 2 tablespoons olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons dried mint
  • Salt and pepper

Instructions:

Dice tomatoes and cucumbers into even, bite-sized pieces. Finely slice the green onions, and combine with tomato and cucumber in a large bowl. Combine olive oil, red wine vinegar and dried mint, pour over salad, and toss. Season with salt and pepper to taste.

Traditional Greek Salad

Ingredients:Traditional Greek Salad

  • 4 tomatoes
  • ½ cucumber
  • 55g (2 oz.) feta cheese
  • Juice of 1 lemon
  • ¼ cup olive oil
  • Kalamata olives
  • ½ purple or red onion
  • Salt and pepper
  • Baby spinach or lettuce (optional)

Instructions:

Cube tomatoes and cucumber and place in a serving dish. Sprinkle with crumbled feta, and drizzle with lemon juice and olive oil. Season to taste with salt and pepper. Garnish with olives and slices of onion. Spinach leaves or lettuce leaves are optional, but delicious.

 

Simple Summer Tomato Salad

Ingredients: Simple Summer Tomato Salad

  • Ripe red heirloom tomatoes
  • Ripe yellow heirloom tomatoes
  • Ripe green heirloom tomatoes
  • Bunch of fresh basil
  • 2 tablespoons extra virgin olive oil
  • Balsamic vinegar
  • Salt and pepper

Instructions:

Take equal quantities of each red, yellow and green tomatoes, slice, and arrange on a platter. Top with torn basil, and dress with olive oil and a splash of balsamic vinegar. Season to taste. For a delicious variation, try adding torn bocconcini or buffalo mozzarella.
